KINNIE TOFU SKEWERS

Here’s something a little different to the usual. We’re never scared to venture out of our comfort zone – how about you?

I pack firm tofu (400g)
OLIVE OIL
200ml Kinnie
OLIVE OIL
3 tbsp ketchup
OLIVE OIL
2 tsp Sriracha
OLIVE OIL
1 tsp fresh grated ginger
OLIVE OIL
1 tsp soy sauce
OLIVE OIL
Kebab skewers

Directions

  • Dry tofu with a paper towel. Cut into cubes, then halve each cube and place tofu in a large bowl.
  • In a small bowl, add soy sauce, Kinnie, ketchup, ginger, and Sriracha. Whisk and pour over the tofu. Make sure that each piece has been covered in marinade.
  • Place bowl in the refrigerator for 2-3 hours, stirring from time to time.
  • Wet the skewers and load them with tofu pieces. Place them under the grill and rotate/brush with marinade from time to time.
  • Watch the marinade as caramelizes and don’t let them burn!
  • Sprinkle them with chopped coriander and serve!
