I pack firm tofu (400g)

200ml Kinnie

3 tbsp ketchup

2 tsp Sriracha

1 tsp fresh grated ginger

1 tsp soy sauce

Directions
- Dry tofu with a paper towel. Cut into cubes, then halve each cube and place tofu in a large bowl.
- In a small bowl, add soy sauce, Kinnie, ketchup, ginger, and Sriracha. Whisk and pour over the tofu. Make sure that each piece has been covered in marinade.
- Place bowl in the refrigerator for 2-3 hours, stirring from time to time.
- Wet the skewers and load them with tofu pieces. Place them under the grill and rotate/brush with marinade from time to time.
- Watch the marinade as caramelizes and don’t let them burn!
- Sprinkle them with chopped coriander and serve!
