2kg smoked gammon joint

4 onions quartered

1 orange sliced

1 tbsp peppercorns

1 tbsp whole cloves

1 tsp nutmeg

2l of Kinnie

a handful whole cloves

4 tbsp honey

2 tbsp wholegrain mustard

1 tbsp soy sauce
Directions
- Place the gammon joint in a large pot and add the onions, orange, peppercorns, one tablespoon of cloves, nutmeg and Kinnie.
- Bring to the boil and simmer for 3 hours.
- Remove the joint, score the skin and stud it with cloves.
- Mix the rest of ingredients and drizzle over the joint, roasting at 180C for 45 minutes.
