KINNIE ROAST GAMMON

This recipe is one of our favourites and though popular during the festive season, is perfect to enjoy throughout the year!

2kg smoked gammon joint
OLIVE OIL
4 onions quartered
OLIVE OIL
1 orange sliced
OLIVE OIL
1 tbsp peppercorns
OLIVE OIL
1 tbsp whole cloves
OLIVE OIL
1 tsp nutmeg
OLIVE OIL
2l of Kinnie
OLIVE OIL
a handful whole cloves
OLIVE OIL
4 tbsp honey
OLIVE OIL
2 tbsp wholegrain mustard
OLIVE OIL
1 tbsp soy sauce
OLIVE OIL

Directions

  • Place the gammon joint in a large pot and add the onions, orange, peppercorns, one tablespoon of cloves, nutmeg and Kinnie.
  • Bring to the boil and simmer for 3 hours.
  • Remove the joint, score the skin and stud it with cloves.
  • Mix the rest of ingredients and drizzle over the joint, roasting at 180C for 45 minutes.
