KINNIE PULLED PORK

1.5kg pork shoulder (boneless)

4 tbsp. dark brown sugar

2 garlic cloves, minced

1 small onion, minced

1 tsp ground paprika

1 tsp ground cumin

2 tbsp. olive oil

660ml Kinnie (2 cans)

Directions

  • Oven on 150ºC (fan).
  • Trim fat from pork and cut into chunks.
  • Mix all other ingredients apart from Kinnie and coat the pork in a bowl.
  • Over a medium heat, add the pork to the olive oil in the pot and sear on all sides.
  • Add the Kinnie and transfer the closed pot to the oven for 3 hours.
  • Remove the lid and cook for another hour or until the pork comes apart easily with a fork.
  • Serve with corn and rice or in warm buns with BBQ sauce.
