1.5kg pork shoulder (boneless)

4 tbsp. dark brown sugar

2 garlic cloves, minced

1 small onion, minced

1 tbsp. salt

1 tsp ground paprika

1 tsp ground cumin

2 tbsp. olive oil

Pepper

660ml Kinnie (2 cans)
Directions
- Oven on 150ÂșC (fan).
- Trim fat from pork and cut into chunks.
- Mix all other ingredients apart from Kinnie and coat the pork in a bowl.
- Over a medium heat, add the pork to the olive oil in the pot and sear on all sides.
- Add the Kinnie and transfer the closed pot to the oven for 3 hours.
- Remove the lid and cook for another hour or until the pork comes apart easily with a fork.
- Serve with corn and rice or in warm buns with BBQ sauce.
