1.5kg pork shoulder (boneless)
4 tbsp. dark brown sugar
2 garlic cloves, minced
1 small onion, minced
1 tbsp. salt
1 tsp ground paprika
1 tsp ground cumin
2 tbsp. olive oil
Pepper
660ml Kinnie (2 cans)
This recipe is for a cast-iron pot (Le Creuset) but can also be done using a slow-cooker.
Directions
Oven on 150ºC (fan).
Trim fat from pork and cut into chunks.
Mix all other ingredients apart from Kinnie and coat the pork in a bowl.
Over a medium heat, add the pork to the olive oil in the pot and sear on all sides.
Add the Kinnie and transfer the closed pot to the oven for 3 hours.
Remove the lid and cook for another hour or until the pork comes apart easily with a fork.
Serve with corn and rice or in warm buns with BBQ sauce.
